Mushroom dumplings: a classic for a Lenten table

Deruny is one of the most popular lean dishes in Ukraine. With the addition of wild mushrooms, they become especially tender and aromatic. Serve them with herbs and your favorite sauce.

Ingredients:

  • potatoes — 0.5 kg
  • mushrooms — 250 g
  • onion – 1 pc.
  • • salt and spices — to taste
  • • oil — for frying

Preparation:

1. Peel and grate the potatoes.

2. If the mushrooms are fresh, rinse and slice them. For dried mushrooms, soak in boiling water for 15–20 minutes, then chop finely.

3. Peel and grate the onion.

4. Mix potatoes, mushrooms and onions, add salt and spices.

5. Heat a frying pan with oil, spoon in the potato mixture and fry the potatoes until golden brown.

Baked pumpkin with garlic: healthy and tasty

Pumpkin is rich in vitamins, including the rare vitamin T, which makes it a great option for a lean meal. This simple and healthy dish doesn't require much effort.

Ingredients:

  • pumpkin — 1 pc.
  • garlic — 2–4 cloves
  • olive oil — 1 tbsp. spoon
  • salt and spices – to taste

Preparation:

1. Wash and remove seeds from the pumpkin, cut into slices.

2. Finely chop the garlic.

3. Place the pumpkin on a baking sheet, drizzle with olive oil, and sprinkle with garlic and spices.

4. Bake in an oven preheated to 200 °C for about 40 minutes, turning the slices occasionally.

5. Serve with sauce and fresh vegetables.

Vinaigrette: a classic of the Lenten table

Vinaigrette is a traditional salad that is popular in the post-Soviet space. Light and nutritious, it will be a great addition to your lean menu.

Ingredients:

  • potatoes — 200 g
  • carrots — 200 g
  • • beets — 200 g
  • • pickled cucumbers — 150 g
  • • onion — 100 g
  • • green peas — 100 g
  • • vinegar and oil — to taste
  • • salt and spices — to taste

Preparation:

1. Boil the potatoes, carrots and beets in their skins, cool and cut into cubes.

2. Also dice the pickles and onions.

3. Mix the vegetables, add the peas.

4. Prepare the dressing from oil, vinegar and spices, pour over the salad and mix.

Baked potatoes with herbs: a fragrant dish

Baked potatoes with aromatic herbs are a hearty and simple dish that everyone will enjoy.

Ingredients:

  • potatoes — 4–5 pcs.
  • dried herbs (Italian or Provencal) – 3 tsp
  • olive oil — 2–3 tablespoons
  • salt and pepper – to taste

Preparation:

1. Wash, peel and slice the potatoes.

2. Dry it with paper towels to get rid of excess starch.

3. Mix the oil with the herbs, pour over the potatoes and leave for 15 minutes.

4. Place on a baking sheet, sprinkle with salt and pepper.

5. Bake at 200°C for approximately 45–50 minutes until golden brown.

Lean dumplings with cherries: dessert for the lean table

Cherry dumplings are delicious childhood memories. In a lean version, they are prepared with only four ingredients and do not take much time.

Ingredients:

  • cherries — 300 g
  • flour — 400 g
  • water — 300 ml
  • salt – to taste

Preparation:

1. Add salt to the sifted flour and gradually pour in warm water, kneading the dough.

2. Leave the dough to “rest” under a towel for 1 hour.

3. Wash the cherries and remove the stones.

4. Cut circles from the dough, place the cherries on them and seal the dumplings.

5. Cook in boiling water, placing them one at a time. When the dumplings float to the surface, remove and serve with syrup or jam.

Tips for a lean diet

During fasting, it is important to keep your diet varied. Include more vegetables, cereals, and legumes in your menu to get all the necessary vitamins and minerals. Lenten dishes can be not only healthy, but also very tasty if you approach their preparation creatively!
