It tastes best if you let it sit for a few hours or even until the next day. This will enhance the flavors and make the cake even tastier, — Olga noted.
Ingredients:
• Butter – 180 g
• Salt – a pinch
• Sugar – 140 g
• Eggs – 2 pcs.
• Curd cheese 9% – 180 g
• Flour – 390 g
• Baking powder – 10 g
• Cinnamon – 3 g
• Dried ginger – 2 g
• Walnuts – 130 g
• Dried fruits – 300 g
• Orange juice – from 1-2 oranges
• Cognac or rum – 40 g
• Powdered sugar – 60 g
Wash the dried fruits and soak them in a mixture of orange juice and cognac. The liquid should cover them completely. Leave for at least an hour (or better – overnight).
Beat room temperature butter with sugar and salt until fluffy (6 minutes on high speed). Add eggs and cheese one at a time, beating until smooth.
Mix the flour with baking powder and gradually add to the base, mixing with a spatula. Add cinnamon, ginger, dried fruits (drained first) and nuts and mix.
Put the dough in a greased pan. Bake for 40-50 minutes at 180°C, checking for doneness with a wooden skewer. Let the cake cool completely. Dust with powdered sugar and decorate to your taste.
