Here are several signs indicating that the watermelon has ripened in an unnatural way:
1. Lack of characteristic crackling: watermelon with nitrates does not produce the usual crackling sound when squeezed.
2. Pedicel and spot on side. A ripe watermelon should have a dry stem and a bright yellow spot on the side, indicating that the fruit has been lying on the ground for a long time and has ripened naturally. A watermelon with nitrates will have a white spot or no spot at all.
3. Color and veining of the pulp. The inside of a watermelon with nitrates will be riddled with thick yellow veins, and the flesh may be too bright or even have a purple tint.
4. Pulp structure: The pulp of a ripe watermelon should be “sugar” when cut, whereas in a watermelon with nitrates it will be smooth.
5. Nitrate test. If you doubt the quality of a watermelon, dip a piece of pulp into water. If the liquid turns bright pink, it means the watermelon contains nitrates.
