- soda treatment— a small amount of baking soda is applied to the wet apple, which is gently rubbed onto the fruit until the soda is completely dissolved. This step effectively neutralizes chemicals and preservatives that are often used to treat fruits to increase shelf life;
- rinsing — after treating with soda, the apple must be thoroughly rinsed under running water.
