Medical experts increasingly emphasize the importance of including soups in the daily diet. However, not every soup is equally healthy. According to doctors, vegetable soups bring the greatest health benefits – light, nutritious and rich in vitamins.

Such first courses have a beneficial effect on digestion, speed up metabolism and help maintain the body's water balance. They are especially recommended for the elderly, children, nursing mothers and those who adhere to a gentle diet.

“Vegetable soup without frying is a simple way to saturate the body with vitamins without unnecessary stress,” nutritionists emphasize.

Unlike meat broths, which often contain extractive substances and sometimes antibiotic residues, vegetable soups are safer and easier to digest. If you still want to make meat soup, experts advise using home-made meat and draining the first broth to remove excess impurities.

It is important to cook the soup correctly: it is better to put the vegetables in already boiling water and immediately cover the pan with a lid. This helps to preserve more vitamins due to the formation of steam that remains inside. At the same time, do not oversalt the dish and it is better to use seasonal vegetables – they contain a minimum of nitrates and additives.

Doctors also warn: do not eat soup that is too hot. High temperature can damage the esophageal mucosa and over time even increase the risk of diseases. It is better to heat the soup in portions, while preserving all the useful properties.
