Tiramisu with tangerines according to the recipe of Yevhen Klopotenko

Ukrainian chef and restaurateur Yevhen Klopotenko decided to combine traditional ingredients for tiramisu with the most New Year's product, namely tangerines, writes WomanEL. This dish definitely deserves to be part of your holiday table.

Ingredients

For tangerine kurd
400-450 g tangerines (150 g juice);
4 eggs;
50 g sugar;
80 g butter;
1 yolk.

For the cream
200 ml 33% cream;
30 g powdered sugar;
400 g mascarpone.

For tiramisu
200 g savoyardi cookies;
300 ml milk;
2-3 tangerines for decoration.

Preparation

Crush the tangerines without the peel in a blender. Strain the mass to obtain juice. We need about 150 ml of juice.

Mix the eggs, sugar, butter, yolk and tangerine juice in a saucepan. Cook over low heat until thickened for 5 minutes, stirring constantly. Cool the curd.

For the cream, beat the 33% cream with a powerful mixer until stable peaks form. Beat the first minute at low speed, and then increase to maximum. Add powdered sugar and mascarpone and beat the mass until the ingredients are combined.

Start assembling the tiramisu. Dip the Savoyard cookies in the milk and place them on the bottom of a rectangular ceramic dish. In total, about 200 g of cookies and 300 ml of milk will be needed for the dessert.

Cover the cookies with buttercream on top, then with tangerine cream. Spread the cream with a spoon.

Repeat the layer of cookies, then cover it with tangerine curd, and then with buttercream.

Decorate the last layer with 2-3 tangerines cut into circles. Let it sit in the refrigerator for a few hours. Enjoy!
