38-year-old chef Yevgeny Klopotenko has spent the last 4 months exploring our connection through food to the times of Kyivan Rus, reports WomanEL. Few people know, but Klopotenko's restaurant “100 Years Ago” stands on the site of the former palace of Yaroslav the Wise. The restaurateur decided to find out from official records what the prince actually ate.
So, in the new menu “Kyivska Rus” you can taste dishes from the 14th–18th centuries, namely dishes from:
- Kyiv Pechersk Lavra;
- Kyiv-Mohyla Academy;
- Ostroh Academy;
- The Savior and Transfiguration Cathedral in Chernihiv.
In addition, you can see archives, censuses, and ancient texts. All to create a reconstruction of the tastes of that time — the set menu “Kyiv Rus” in “100 Years Ago Forward.” And this is just the beginning.
