I've been waiting for this moment for 5 years: Klopotenko shared the good news

In light of modern challenges and needs of society for healthy nutrition, school nutrition reform is becoming a hot topic for many countries, writes  WomanEL. Ukraine does not remain aloof from this process, and at the presentation of a new book with recipes for school canteens, the famous Ukrainian chef Evgeniy Klopotenko spoke about his work on this project.

On April 18, a presentation of the book took place in Kiev, where Klopotenko shared details of cooperation with the team and initiator of the school nutrition reform Elena Zelenskaya. It was they who came together to achieve changes in the food system in educational institutions.

Evgeniy also noted that these are 14 sections and 621 dishes developed jointly with leading nutritionists and technologists. Here you can find traditional Ukrainian dishes and popular dishes of world cuisine. This is more than 4 years of journey from idea to full implementation.

The book contains detailed recipes with designated allergens and recipes for the various needs of children — more than 80 lactose- and gluten-free food alternatives, etc.

As it turns out, the process of developing food for educational canteens was not an easy task, because each recipe must not only be tasty, but also meet safety and health requirements. However, thanks to the perseverance and creative approach of the team, they managed to create a wide range of dishes that delight in quality and taste.
