Easter table with Alex Mil: 3 holiday recipes

Everyone prepares for the holiday in their own way, but after a long period of abstinence during Lent, housewives prepare a lot of goodies. WomanEL offers to diversify the Easter table with original dishes of the famous Ukrainian food blogger Alex Mil.

Ingredients:

1200-1500 g pork tenderloin or cutlet;
1.5-2 liters of water;
2-3 tsp. l salt.
For the marinade:

50 g soy sauce;
70 g honey;
2 tbsp grainy mustard;
a mixture of spices for meat;
a little dried herbs + 50 ml water.

Pierce the meat with skewers on both sides. Transfer to a plate, cover with water, add salt and leave to marinate for 4 hours. Drain the water and wipe the meat with a napkin.

For the marinade, pour soy sauce, liquid honey, grain mustard, dried herbs and a package of spice mixture into the meat. Stir, pour in the sauce and coat the meat well on all sides. Leave to marinate for at least 6 hours.

Transfer to baking dish. Add water to the remaining sauce, mix, pour over the meat. Cover with a lid or foil. Bake at 180C for 70-90 minutes, depending on the size of the meat.

Remove every 20 minutes and pour over the marinade. When the meat is ready, remove from the pan and let cool.

Ingredients

For the dough:

400 g poppy seeds;
140 g sugar;
4 eggs;
50 g starch;
50 g butter;< br>150 g flour;
1 tsp baking powder.
Sponge cake:

5 eggs;
120 g sugar;
70 g flour;
1 tsp. l baking powder;
10 g cocoa.
Cream:

0.5 l cherry juice;
sugar to taste;
40 g starch;
300 g butter .
Additional:

200 g of cherries in juice;
2 packs of cherry jelly 90 g each;
400 ml of boiling water.

Pour dry ground poppy seeds with water, boil, stirring, until the water boils away. It should become dry. Leave to cool under the lid.

Pour in the melted butter, add the nuts and knead. Beat the eggs with sugar with a mixer until fluffy, add starch and mix at low speed.

Add the dough to the poppy seeds, pour in the flour mixed with baking powder. Pour the mixture into a mold lined with parchment. Bake at 170 C for 40 minutes and let cool.

For the sponge cake, beat the whites until foamy, add sugar and beat until stiff. Kill the yolks and beat at low speed for another minute. Add flour and baking powder and mix for another minute.

Pour 2/3 of the dough into a baking dish. Add cocoa to the remaining dough and mix. Pour over the light dough, bake at 170 C for 30 minutes and let cool completely.
Add starch to the cherry juice and cook, stirring, until thick. Let it cool. Mix with soft butter in a blender into the cream. Pour boiling water over cherry jelly and leave until liquid jelly forms.

Lubricate the poppy layer with cream, lay out a lot of cherries. Grease the sponge cake with cream and place it on the poppy seed layer. Then we grease the sides with cream, making a small side at the top. Lay out the cherries, pour in the slightly frozen jelly and let it harden completely.

Ingredients:

250g chocolate (optional – milk, white, black).
For filling:

100 g Philadelphia cream cheese;
100 g Philadelphia Milka cream cheese;
20 g freeze-dried raspberries;
20 g nuts;
20 g chocolate balls;
chocolate powder;
vanilla sugar.

We take dry forms in the form of half an egg – it can be silicone or Kinder Joy halves. Temper the chocolate in the microwave in pulses: cook for 15 seconds, remove, stir. We do this several times until the chocolate is completely melted to a liquid state.

Pour the chocolate into the molds and put it in the refrigerator for 3 minutes. We take out and drain the excess chocolate so that it remains only on the walls – and back into the refrigerator for 30 minutes so that the chocolate in the molds completely hardens.

Then we take the chocolate out of the molds and put it on a napkin. Lightly squeeze and leave in the refrigerator while preparing the cream.

For white chocolate, take Philadelphia Milka cream cheese and mix with nuts, no need to add sugar. Add powdered sugar, vanilla sugar, chocolate balls, freeze-dried raspberries to the dark chocolate in Philadelphia cream cheese and mix.

Place the filling into a piping bag and fill with eggs. Then we connect the two halves and put them in the refrigerator to harden.
